Matcha mojo recipe from T2

Gaurav from T2 has kindly shared his recipe for the beautifully refreshing Matcha Mojo 

Matcha

Here’s the matcha mojo recipe for you all.

Needed:

1x large lemon
1-2limes
Loads of mint
Turkish Apple (optional)
Sparkling water
Matcha

Squeeze half a lemon half a lime. Cut the rest up into slices
Clap the mint and rip it with your hands
Put all into to the jug. Add ice and shake.

Make matcha

Turkish Apple: 4-8 scoops depending on size of jugs dissolve in a small amount of hot water and then  add to the jug with matcha.
Add sparkling water and shake again.

Then enjoy.

Shortbread

Here is the recipe for the fantastic shortbread Janice made for the garden party.

100g butter
50g castor sugar
175g plain flour

Place all the ingredients in the mixer bowl and using a slow speed combine them until sticky.

Spoon into a 20cm (8inch) round flan ring placed on a baking sheet. Press down using the back of a spoon to smooth the surface. Prick lightly with a fork and divide into portions marking halfway through the shortbread with a sharp knife.

Bake in a cook oven (150 degrees C, 300 degrees F, Gas mark 2) for 40-50 mins.

Remove the flan ring carefully and cool the shortbread on a wire tray.
Dredge the shortbread with castor sugar.
